- 1 cup sugar
- 1 tsp vanilla
- 2 eggs
- 1/2 cup flour
- 1/3 cup baking cocoa
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup coarsely chopped pecans
- Chocolate Frosting (recipe follows)
- Pecan halves
Preparations Method :
- Heat the oven to 350 F.
- Lightly grease an 8 or 9 inch square baking pan.
- Beat the butter, sugar, and vanilla with a wooden spoon in a large bowl.
- Add the eggs.
- Beat well.
- Stir together the flour, cocoa, baking powder, and salt.
- Gradually add to the egg mixture.
- Beat until well blended.
- Stir in the chopped pecans.
- Spread in the prepared pan.
- Bake for 20 to 25 minutes or until the brownies begin to pull away from the sides of the pan.
- Meanwhile, prepare the Chocolate Pecan Frosting.
- Spread the warm frosting over the warm brownies.
- Garnish with pecan halves.
- Cool completely.
- Cut into squares.
Chocolate Pecan Frosting
- 1 1/3 cups powdered sugar
- 2 tbsp baking cocoa
- 3 tbsp butter or margarine
- 2 tbsp milk
- 1/4 tsp vanilla
- 1/4 cup chopped pecans
- Place the powdered sugar and the cocoa in a medium bowl.
- Heat the butter and the milk in a small saucepan over low heat until the butter is melted.
- Gradually beat into the cocoa mixture.
- Beat until smooth.
- Stir in the vanilla and pecans. (Makes about 1 cup of frosting)
Makes about 16 brownies
